Spread the word!

I don’t know about you, but as a millennial mom, I was never really taught how to cook. I grew up largely on hamburger helper and hot pockets, so it was a big challenge for me to start making meals for my family. For a long time I just didn’t cook, but as my kids are getting bigger and my husband is working more, I have started taking steps to teach myself to cook super simple meals that are delicious and easy! That’s where this wicked simple cheesy chicken noodle casserole came in!

Keeping Meals Simple for Millennial Moms

When I decided that I needed to start cooking, naturally I found myself searching food blogs. The problem? The recipes were way over my head. I was struggling with the basics, so I definitely can’t do a recipe that has 14 different spices and 8 different specialty foods. I needed something as simple as a box meal, but delicious and a touch healthier than the boxes. So with this cheesy chicken noodle casserole, there are only a few ingredients and they’re all easy to find. The prep time can be less than five minutes, and all you have to do after that is toss it in the oven.

Making Freezer Meals to Save Time

Okay, beyond being wicked simple, I needed my cheesy chicken noodle casserole to be freezer-friendly! Since I’m a total beginner, I knew that it was going to be impossible for me to start putting together dinner every single night. But we were eating out way too often, and we needed to make a change now. The solution? Freezer meals! This past weekend Chris and I cooked together and we put together over 30 meals, and this cheesy chicken noodle casserole was one of them!

Before we get to the recipe, I want to get real with you guys. I’m not a foodie. I’m not even really a “food blogger”. I am just a busy mom who put together a simple meal that millennial moms like me with little to no cooking skills could also put together, so I wanted to share. We just cooked the casserole tonight and it was delicious, so I hope that your family enjoys it as much as mine did! Oh, and if you don’t plan to cook this right this second, make sure you pin the image below so you can find this recipe again!
